The research refers to the dietary regime of the population of Moldova in the period from the end of the 16th century to the beginning of the 19th century. Especially during the fasting period, an important role in the daily ration was played by milk and dairy products (cream, butter, cheese, etc.). Their presence in the diet was also conditioned by the traditional economic activity of the population of Principality of Moldova, in which animal husbandry played a leading role, also supported by the demand for dairy products on the market. Dairy products were traded, which stimulated the creation of dairies and the activity of cheesemakers. Different types of sources note the consumption of dairy products by all categories of the population. The prices of these products depended, to a large extent, on their quality.
