Abstract

The article describes the changes of surface structures 10 winter varieties of apple fruit during the long-term storage, depending on the concentration oxygen and carbon dioxide. Study of the structural changes in the tissues of winter varieties of apple fruits stored for 180 days under the CSG, revealed the following trends: the ability to long-term storage in a lack of oxygen determined by the rates of biodegradation components of the cuticle and epidermis, intensity of intercellular space formation and consumption of cellular nutrient substances (poly- and monosaccharides). Our studies have also enabled to determine the optimum ratio O2/CO2 for each variety during the long-term storage.
