ENZYMATIC ACTIVITY OF SOME YEAST BIOMASS EXTRACTS FROM THE BEER INDUSTRY WASTE 

The article presents the research results of the efficiency of six different methods of autolysis of brewer's yeast biomass and the activity of catalase (CAT) and superoxide dismutase (SOD) of different nature extracts, obtained from it. CAT and SOD activities have been studied in amino acid protein, mannoprotein and β-glucan extracts. According to the obtained results, the basis factors that condition the obtaining of extracts with maximum CAT and SOD activities are pH and tem-perature used in autolysis. To obtain extracts of different nature with high CAT and SOD activities, it is opportune to use sodium phosphate buffer (pH-7,8) and the temperature of +45°C at the initial stage of processing yeast biomass (autolysis). The protein extracts obtained from waste yeast biomass from the beer industry, characterised by high CAT and SOD activities, have a high potential for use in the food, pharmaceutical industries and livestock sectors.
